Your tea cools down mostly due to Evaporation.

The hottest, fastest molecules at the surface escape into the air as steam. Since the most energetic ones are leaving, the average energy of the tea left in the cup drops. This is exactly why sweating cools you down—the sweat evaporates, taking your body heat with it.
