The Earth wire is usually the green/yellow one in a 3-pin plug. It is a safety feature.
If a live wire gets loose and touches the metal casing of your fridge, the fridge would become live. If you touched it, you would get a shock! The Earth wire provides an easy path for that dangerous current to flow safely into the ground, usually blowing the fuse instantly to warn you.
