Adding heat can change the state of matter. Melting (Solid to Liquid), Boiling (Liquid to Gas), Sublimation (Solid directly to Gas).

While the state is changing (like ice melting to water), the temperature STAYS THE SAME until the change is complete. That hidden energy is called Latent Heat.
